– 4 medium sweet potatoes, peeled (or 4 cups mashed)
– 1 ripe organic banana
– 2 1/2 cups of unsweetened almond milk
– 1 tablespoon of organic honey
– 1 large egg
– 4 egg whites
– 1 teaspoon sea salt
– 1 1/2 teaspoons cinnamon
– 3/4 cup chopped pecans

Peel the potatoes and cut them into large wedges, place them into a boiling pot of water for about 10 minutes or until tender.
Meanwhile, place all the other ingredients in a blender or food processor, mix until everything is well combined.
Once the potatoes are cooled place them in the blender with the rest of the ingredients, and blend until smooth.
Spray your crockpot with cooking spray then pour your sweet potatoe mixture into the crockpot.
Meanwhile, to make the topping, combine ingredients in a small bowl and mix together. Sprinkle the toppings over the sweet potatoes and cook on high for 3-4 hours or on low for 6-8 hours.
To bake in the oven: simply pour the sweet potatoe mixture into a 9×13 sprayed pan instead – top with topping. Cook for 40 – 45 minutes at 375 degrees.
