Ingredients –

¾ cup of peanut butter (organic is better)

A tablespoon or two or honey (to taste)

1 to 2 scoops of vanilla protein powder (depending on how runny your peanut butter is – too much protein and they dry out a little bit)

Pinch of salt if using unsalted peanut butter

Teaspoon of vanilla (optional)
Directions –

Mix together until well mixed and smooth

Use a small cookie scoop & scoop out dough onto parchment paper lined cookie sheet

Pop into the freezer for 30 minutes or so

Melt one 88% dark chocolate bar, add a tablespoon of melted coconut oil & mix well

Either drizzle the dark chocolate on top of the peanut butter balls or you can dip the whole peanut butter ball in the dark chocolate

Pop back into the freezer for about 30 minutes – then enjoy!
