I was in a pinch last week for a quick dinner option. Summer evenings can be a difficult time to get a healthy meals on the table quickly. I thawed some chicken thighs and place them along with the marinade ingredients in a zip lock before work in the morning. I quickly grilled the meat when I got home in the evening. Within 20 minutes we had this AMAZING meal on the table!
1 pound chicken breast of thighs (I used thighs because they keep their moisture when grilling)
1 1/2 tbsp garlic infused olive oil
1 tbsp organic thyme
1 tbsp organic oregano
3-4 cloves crushed garlic
3 tbsp fresh lemon juice
1/2 tsp sea salt
1/4 tsp ground pepper
1 fresh sliced lemon
1. Place marinade ingredients in a zip lock along with the chicken. Let it marinate for a least 30 minutes (all day or overnight is preferred – the longer the better).
2. Grill chicken for 15-20 minutes until no longer pink. Garnish with fresh sliced lemon.
3. Pairing options are grilled or broiled asparagus drizzled with garlic olive oil, salt, and pepper. You can also add a fresh green salad and seasonal fruit as sides. Melons, berries, or peaches are all in season! Yum!
