These muffins almost taste too good to be true – but oh, are they true!
1 1/4 cup Oat Flour
1/4 cup Naked Whey Protein Powder
1/2 cup Baking Stevia
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 cup Plain Greek Yogurt or Unsweetened Apple Sauce
1 Egg White
3/4 cup Fresh or Frozen Berry of Choice! (blueberries, raspberries, blackberries, etc.)
3 tbs Dark Chocolate Chips
1. Pre-heat your oven to 350 degrees. Line 10 muffin tins with silicone or foil muffin liners (to prevent sticking) and spray with non-stick cooking spray.
2. In a medium bowl, mix everything except for berries and chocolate chips together. Gently fold the berries and chips into the batter. Divide the batter evenly among muffin cups.
3. Bake for 20-25 minutes, or until a toothpick comes out clean!
Makes 10 servings – 1 muffin per serving
With Chocolate Chips
