Ingredients

  • 2 tablespoons coconut flour

  • 1/4 cup finely chopped mushrooms

  • 1/4 cup Parmesan cheese, grated

  • 16 oz canned salmon (wild caught)

  • 1/4 cup chopped green onions

  • 2 tsp Cajun seasoning

  • 1/4 tsp sea salt

  • 1 egg

  • 2 tsp coconut oil ​

For the Dip:

  • 2 tablespoons plain greek yogurt

  • 2 tablespoons organic horseradish

  • 1 tsp minced garlic

  • 1/8 teaspoon sea salt​

Directions

  1. In a medium bowl, mix together ground salmon, parmesan, chives, Cajun seasoning, 1/4 tsp salt, egg, coconut flour and mushroom pieces.

  2. Evenly divide mixture into 8 portions and flatten out into thick patties.

  3. Add oil in a large nonstick skillet over medium heat.

  4. Carefully place the patties in the pan and cook 6-8 minutes on each side or until done.​

For the Dip:

  1. In a small bowl, whisk together greek yogurt, horseradish, garlic and salt.

  2. Serve with the cakes!
