Nicole’s Favorite: Buffalo Chicken Lettuce Wraps


2 Grilled or Baked Chicken Breasts, chopped into bite size pieces
1/8 Cup Frank’s Buffalo Wing Sauce
6 Organic Carrots
1 Cup Organic Roasted Corn (Trader Joes)
One Head of Organic Romain lettuce
Shredded Sharp Cheddar Cheese (optional)
Avocado, diced (optional)

In a mixing bowl re-heat chicken then add buffalo sauce until chicken is evenly coated. Chop off the end of a head of romaine lettuce then separate and wash leaves. Shred carrots in a food processor like you would cheese. Heat corn according to package directions. Dice avocado. Build a lettuce wrap beginning with chicken then carrots, corn and top with cheese or avocado.
