Greek Style Chicken

Ingredients

1.5 lbs. boneless skinless chicken breasts (about 4)

3/4 cup plain greek yogurt

1 tbs lemon juice

1 tbs garlic, minced

1/4 tsp pepper

1/2 tsp oregano

1/4 cup parmesan cheese, grated

Topping:

1 (15 oz.) can artichoke hearts, quarted and blotted dry

1 cup grape tomatoes, halved

1/2 cup mozzarella cheese, shredded

2 tbs parmesan cheese, grated

Instructions

1. Preheat oven to 375 F. Spray a 9X9 inch pain with cooking spray.

2. Combine greek yogurt with garlic, lemon juice, seasonings, and parmesan cheese in a small bowl. Place the chicken breasts in the prepared baking pan. Spread the greek yogurt mixture over the top of the chicken. 

3. Sprinkle the artichoke hearts, tomatoes, and cheese over the top of the chicken. Bake at 375 degrees for 25 minutes, (or until chicken is no longer pink in the middle, and it reaches in internal temperature of 165 degrees or more.) Turn oven up to 425 degrees, and bake for 5-10 minutes or until lightly golden brown. Remove from the oven and enjoy with salad or veggie of choice if desired!
