Garlic Mashed Cauliflower



1 medium head of cauliflower

2 tbsp cream cheese

2 tbsp organic butter

1/4 cup plain greek yogurt

4 garlic cloves

dash of salt and pepper to taste


1. Chop cauliflower into florets and place on stove in water. Bring to boil and cook until tender and mushy.

2. Place cauliflower in colander and drain off all liquid.

3. Return cauliflower to pot adding remaining ingredients and mash until smooth.

4. Reheat if necessary, sprinkle with parmesan cheese if desired.
