Edamame Wheat Berry Salad

Ingredients –

1/2 cup dry wheat berries

1/2 can of black beans, rinsed and drained

1 cup frozen, shelled edamames, thawed

1 cup chopped tomato (I prefer to use cherry tomatoes and just cut in half)

1/2 cup finely chopped red onion

3 Tbsp. extra virgin olive oil

2 Tbsp. red wine vinegar

Salt and pepper to taste


Directions –

Prepare wheat berries according to package directions. Drain and run under cold water to cool quickly. Drain again. Combine the wheat berries with the remaining ingredients in a large bowl. Ready to serve immediately. Store covered in fridge for up to 3 days.
