Chipotle Chicken Salad

Ingredients

Makes 1 serving (1 bowl)

Dressing:

1 Tbsp.fresh cilantro, chopped

1 Tbsp.nonfat plain Greek yogurt

1 Tbsp.white balsamic vinegar

1 tsp.ground cumin

1 tsp.chili powder

1 Tbsp.salsa

1/2 tsp.sugar

Salad:

3 cups Romaine, chopped

4 oz.boneless, skinless chicken breasts, cooked and diced

1/4 cupcherry tomatoes, halved

1/2 cup avocado, peeled and diced

1/4 cupred onion, thinly sliced

1/8 cupblack beans, drained and rinsed

1/8 cupno-salt-added whole-kernel corn, drained and rinsed

Instructions

1. Combine the dressing ingredients in a bottle or small plastic container with a lid. Shake vigorously until well blended. Let sit while you prepare the salad.

2. Place all salad ingredients in a large bowl. Use pre-chopped lettuce and pre-cooked chicken to save time.

3. Mix with dressing and enjoy!
